Pumpkins, Fall, Breaks, and Baking!

What is better to do on fall break than bake a perfectly delicious pumpkin loaf? 


I dearly love to bake and I don't have the ability in college so every time I come home I take advantage of the kitchen! My first baking adventure was a gluten-free pumpkin loaf with streusel topping. 


It is a super easy recipe, has very little sugar (which could be replaced with another sweetener), and is gluten free! I will be making this again in the future :)

I ate it for breakfast this morning with a warm cup of coffee. Let's be honest, I will probably eat it for breakfast tomorrow too... and Sunday. Okay, it will probably be gone by Sunday.

{24 Days of Thanksgiving=Day 2}

Today I am grateful for the change in seasons. This chillier weather is magnificent and makes the day a little brighter. When the temperatures start dropping everyone knows the holidays are right around the corner and it puts a little bounce in their step. I've noticed :)

Tonight I was at a long time friend's birthday party and it was cold enough outside to have the fire going inside. We enjoyed each others company sitting by the warm fire while the wind was having a party outside. Another reason I love this time of year... the weather!

Fall Has Arrived!



I absolutely love fall!

From the trees changing colors to the sweet smell of baking aromas!

We have already made one pumpkin pie, and I just made another to take to school tomorrow! =) Thanksgiving is just around the corner, and I cannot wait to bake until I can't bake anymore, which would take a while. ;)

I think I am going to bring desserts, or something fun I make to school every once in a while. I need other people to enjoy all this deliciousness with me!
